Zucchini & Grilled Corn Salad

Oh zucchini, let me count the ways… julienned, coined, grilled, sauteéd, stuffed, kabob-ed, gratin-ed, muffin-ed, pancake-d… (I know I’m missing a few)… Right now, my zucchini method of choice is the simple ribbon. Just raw. Tossed into salads. I mean, how pretty are they? (Also – how pretty are those plates!?) I very often make corn recipes where frozen corn will suffice – but not this time. This is the time of year where my midwestern roots shine through and I say – you need to get your hands on some fresh corn. And then don’t cook it too much. I grilled my…

Raspberry Polenta Cake

What do you make with leftover polenta and leftover raspberries? Cake, of course! But not just any cake – cake in a skillet. Because skillets = summer. Aside from the little bit of butter I used to grease the pan, this cake is vegan and made with coconut oil. It’s naturally sweetened with maple syrup and, of course, the sweetness that comes from the raspberries. (note: you can grease your pan with coconut oil). It’s a (smaller) version of this peach cake I made last summer – in my 10-inch skillet this cake is just 4 servings, but you can…

Grilled Polenta & Zucchini Salsa

Today, we’re taking homemade polenta to a whole new level… (way beyond skipping the stuff that’s sold in the tube). I ground up my own polenta from popcorn! Who knew it was as easy as that? This recipe comes from The Homemade Flour Cookbook, by Erin of Naturally Ella. Erin is one of by best blog friends (BBF’s forever!), and I couldn’t be more proud of her and her beautiful new book. She breaks down the basics of making your own flour out of all sorts of grains, seeds, nuts, and legumes. It’s also packed with recipes for each type…

Sweet Potato Vegetarian Chili

This one might have been more appropriate to post around Super Bowl time… but really, we’re not fans of “the game” like we are fans of the Olympic Games. I don’t usually like to eat in front of the TV, but these two weeks are definitely the exception. This is a great meal to cozy up to – it’s warm & delicious, and conveniently all in one bowl. Plus, it won’t make you feel too unhealthy while you watch all of the teeny girls (and guys) skate across your living room. Make a big batch and eat the leftovers all week.

Maple Cornbread Muffins

Rosemary & maple make these easy cornbread muffins lightly sweet & cozy-tasting. I love to serve them at Thanksgiving or with a big bowl of chili.

Move over, dinner rolls, and make way for… cornbread muffins! Maybe it’s my Midwestern background, but I love corn, especially in this sweet & savory corn muffin recipe. My Cornbread Muffin Recipe Ingredients In my opinion, good cornbread should be golden & crumbly and walk the line between sweet and savory. These corn muffins do just that. Here’s what I use to make them healthy & delicious: Maple syrup sweetens them naturally and adds depth of flavor to this corn muffin recipe. Rosemary flecks them with green and brings its cozy, fresh wintry taste. Canola oil or olive oil is…

Serrano & Corn Salsa

This recipe started as an idea for a salad. My salad “testing” often happens during lunch – I experiment with a variety of veggies, usually a concoction of whatever I happen to have around. When I come across an especially good combo, I save the idea and make it again later to shoot for a post. The afternoon I sat down to eat the salad-version of this, I was sure it would be a winner. Corn, peppers, cucumber, tons of lime… an easy recipe to use up tons of late summer produce. Well it turned out to have a little…

Cherry Tomato Basil Salad

A simple summer salad - perfect for picnics and BBQ's when tomatoes are in season!

I realize… this hardly counts as a recipe. In fact, I can list a whole slew of “recipes” I’ve posted that don’t reinvent any wheel or involve genius ingredient combinations. But it’s summer, and I’m of the opinion that when summer produce is at it’s peak, you should do little with it. That, or I’m starting to get lazy, I’m not sure which. Either way, this not-rocket-science salad was dinner last Sunday night. A simple & pretty way to welcome the first official weekend of summer. It’s a glorified caprese salad, with sweet basil oil and some crunchy raw corn.…

Mexican Street Corn Salad

This Mexican street corn salad is one of my all-time favorite summer sides. Fresh, bright, lightly creamy & spicy, it's easy to make and sure to please.

This Mexican street corn salad is my at-home version of all the elotes we ate in Austin. Creamy, tangy, and a bit spicy, it’s one of my favorite ways to showcase summer sweet corn. If you’ve been reading the blog for a while, you know that fresh corn is one of my all-time favorite foods. Crisp, juicy, and sweet, you just can’t beat it. Of course, I’ll always love it straight off the cob, but this Mexican corn salad takes it to a whole new level. Mexican Street Corn Salad Recipe Ingredients If you’re not familiar with them, elotes are…

Mini Ceviche Tacos

mini ceviche tacos, two ways (vegetarian & pesca)

I’m guest posting today on A House in the Hills (one of my favorite blogs), while Sarah is in Mexico this week. I know, I’m jealous too. To compensate for my vacation-envy, I made these bright little ceviche tacos and imagined myself on the beach soaking in the sun with a margarita in hand. Whitefish gets “cooked” with lots of lime juice. And for a fun twist I made a vegetarian version using chopped up hearts of palm that was equally, (if not more), delicious than it’s pesca counterpart. You could serve them with chips as an appetizer, or with tortillas as more…

Homemade Cornbread Stuffing

Poblano peppers spice up this sweet & savory homemade cornbread stuffing recipe. Not a fan of spice? Don't worry. It's just as good without them.

Poblano Cornbread Stuffing | Love & Lemons

What are your family’s Thanksgiving traditions? We always have a turkey, of course, along with green beans, mashed potatoes, and sweet potatoes. Oh, and there’s always Jello (and not for dessert… it’s “dinner Jello”). But my favorite part is the stuffing. I’m a huge fan of traditional versions made with crusty bread (see here and here), but this year, I’m changing things up by adding this lightly spicy poblano cornbread stuffing to our Thanksgiving table. What’s in This Cornbread Stuffing Recipe? This homemade cornbread stuffing is a delicious mix of classic stuffing ingredients plus a few extras for a spicy…

Roasted Squash with Apple Salsa

Sweet winter squash are topped with a crisp and tangy fall apple-jalapeño-lime salsa. Serve for a unique Thanksgiving side or a healthy vegan and GF main!

My mom is in town visiting this week. Usually she comes bearing a pile of recipe clippings that she’s been collecting for weeks leading up to the trip. I’ve been stuck in a bit of a “same-ingredient” rut lately, so I was really looking forward to someone else just telling me what to make. But this time she showed up empty-handed and said, “I’m here to eat what you make – you know, all of those recipes you post that I never get to eat because I’m not close enough to stop by for dinner.” So I sat down and…
