Brussels Sprout, Broccoli & Avocado Rice

Brussels sprouts, broccolini & scallions tossed with a tangy & spicy citrus sriracha dressing and topped with creamy avocado! (Gluten-free, Vegan option).

I’m pretty sure this one covers all of my major food groups: green vegetables, avocado, almonds, mint, lime & sriracha. In fact, I could probably stop right here and live happily ever after. I could change our name to The Brussels Sprout Blog and take pictures of this dish – every day – just in a different bowl (you know, to keep things exciting). Of course, I’m kidding, but I do really love this combo. What really pulls it together is the fish sauce (don’t worry, if you’re vegetarian you can sub it out), but it really brings the most amazing…

Brunchy food… it’s perhaps what I cook the most, but what makes it to this site the least. Saturday and Sunday mornings are just not the time to be breaking out the camera. So in an effort to provide a few pre-Easter brunch ideas, we had eggs for dinner… something we should really do more often. I love this sort of meal because it’s a bit of a fridge clean-out. A trip to the store is not necessarily required, you can switch this around to work with what you have. I had a sweet potato and a few brussels sprouts……

Shells & Brussels Sprouts

Growing up, I was made to eat vegetables just as much as the next kid. Broccoli was at the top of my hate list, closely followed by mushy cooked carrots (one of the only veggies I still won’t eat). But I never had to face brussels sprouts. My mom didn’t like them as a child, so she never subjected them to our family. I felt lucky about this… if the adults in my family wouldn’t eat them, they must be that bad. I don’t know what prompted brussels sprouts to go from America’s most hated veggie to darn near the most loved one, but…

Brussels Sprout & Sunchoke Salad

What's your favorite sunchoke recipe? Do you have one? I love this caramelized sunchoke & Brussels sprout salad - a perfect light winter meal.

It’s hardly winter in Austin anymore, but I’m still trying to keep all of you snowbirds in mind. Enter: the winter sunchoke salad. This sunchoke recipe is full of warm, roasty goodness and brightened up with a tangy lemon dressing. Cooking with sunchokes Have you cooked with sunchokes? Do you have a sunchoke recipe to recommend? They’re new to me, but I just love them, so I was eager to develop a sunchoke recipe of my own. Sunchokes, also known as Jerusalem artichokes, have a potato-like quality. I like them both thinly sliced and roasted or sautéed with butter and…

Brussels Sprout & Red Onion Pizza

Shaved Brussels sprouts, sliced red onions, fresh mozzarella, and garlic oil make the ultimate pizza topping combination. Recipe inspired by Bon Appétit.

Last week, it was Brussels sprouts in pasta… this week I bring you the wonder of Brussels sprouts on pizza. This is such a fancy, grown-up pizza combination. Clumps of fresh melty mozzarella, thin shavings of Brussels sprouts and ribbons of red onions… all topped on the perfect soft yet crispy-edged crust brushed with a little garlic oil. For this post, I was trying to think back to a special homemade pizza story to share… I’m half Italian, yet I hardly have a childhood memory of my dad in the kitchen tossing dough in the air. (The only culinary technique my dad…

Rigatoni with Figs & Brussels Sprouts

A veggie-packed pasta dish for fall & winter. Brussels sprouts, greens, cheese & figs combine to create a sweet & savory entree with a crispy baked topping.

It’s Food Matters Project Monday… I have to say, at first, I wasn’t excited about this week’s pick… I even almost skipped it entirely, but I’m so glad I didn’t! Flipping through any cookbook, this would never be a recipe I would stop on. The original recipe calls for blue cheese, which I don’t care for. And creamy, cheesy pasta dishes aren’t exactly my thing (I’m lactose intolerant, it’s not my fault). But it turns out, for comfort food, this is actually on the lighter side and the Brussels sprout and fig combo is just so delicious. There’s a bit…
