Bok Choy Stir Fry

My favorite baby bok choy recipe! Plenty of veggies and a tangy ginger garlic sauce make this easy stir fry a delicious, flavorful weeknight meal.

Stir fry was probably the first healthy-ish meal I learned to make, although it used to look nothing like this. When I was in college, I’d stock up on frozen vegetables because I was broke and they were 4 for $1 at Publix. I’d mix the frozen veggies with instant brown rice and drown it all in soy sauce. While I appreciated the bargain, that dinner was “healthy” for healthy’s sake, and I’d try to convince myself it was delicious while my roommates all ate pizza. Now, I love to make this actually delicious stir fry with lots of fresh vegetables, like baby bok…

Butternut Squash Breakfast Hash

An easy veggie breakfast hash made leftover roasted zucchini and butternut squash topped with fried eggs. A perfect weekend or holiday brunch. Gluten-free.

I’m probably the last to know this – but have you heard that they’ve cancelled Saturday morning cartoons? I suppose on-demand or Netflixed cartoons are probably more convenient, but I am still sad to hear the news. Growing up (without cable), Saturday morning cartoons were what my sister and I looked forward to all week. Pancakes, cereal commercials, the whole bit. Jack and I still have a weekend ritual – although our “cartoon” is Shark Tank instead of Muppet Babies, and our breakfast is usually eggs instead of pancakes. This recipe is a great “use up what you have” kind of breakfast. Butternut squash is the base…

Pumpkin Coconut Curry

Pumpkin Coconut Curry is the perfect healthy comfort food for fall! Creamy vegan pumpkin curry sauce coats tofu and steamed vegetables. Spicy & simple.

I made a lot of things with pumpkin over the weekend – not just because it’s the cliché fall food blogger thing to do, but because I roasted one pumpkin and cooked from it for days! It was the roasted pumpkin that kept on giving… I’ll admit that when it comes to pumpkin I often reach for a can, but the flavor and texture that come from a fresh pumpkin are really worth it. I made pumpkin hummus, pumpkin salad, pumpkin soup… and of course the pumpkin coconut red curry sauce that is pictured here. This sauce is rich and creamy, so to keep things…

Broccoli Pesto Mac & Cheese

The ultimate mac & cheese mix in - broccoli pesto! A yummy way to get your kids to eat more veggies.

Some exiting news – the book is done(!) and off to print this week. I’ll share some sneak peaks a little later but suffice it to say – I’m tired. I never thought I would say this but after shooting, testing, retesting, checking and rechecking so many recipes – I became a little “cooked” out. Over the last few weeks, while working through final copy and design edits, there’s been a lot of takeout around here and more than a few boxes of macaroni and cheese. But no one is complaining – especially not my mac & cheese-loving husband Jack. He would be more than thrilled…

Lemon Broccoli Pasta + Exciting News!

I’ll cut to the chase and just start with “exciting news” part – we’re writing a cookbook! I haven’t been overly secretive about it, but it’s official… 288 pages of never-been-blogged-before vegetable-ey goodness will be out next April! (I know, I know, a whole year away – I promise it’ll be worth the wait). It’s being published by Penguin US and Penguin Canada, the teams behind some of my favorite books including Oh She Glows and What Katie Ate. We’ve been hard at work for months now and I can’t wait to show you how it’s coming together! I’ll be sharing updates and previews…

Any Vegetable Vinegar Pickles

A simple pickle recipe that's great for pickling broccoli, cauliflower, radishes, onions, cucumbers, and more!

I love cookbooks and I hoard them pretty obsessively. Although, I’ll admit, I have a hard time following recipes from start to finish. Which is why I love the premise of Kate Payne’s new book, The Hip Girls Guide to the Kitchen. It’s a “hit the ground running approach, seeing as you need to eat three times daily whether you’ve mastered your kitchen or not.” It’s full of, really, everything you need to know to be pretty successful in your kitchen – from how to set up your pantry to how to put meals together intuitively and economically. (Also she’s gluten…

Roasted Broccoli Bowls

…otherwise known as “roast what you have” bowls. This week (again) was all about quick cooking, olympic watching, and dinners that fit into one bowl. Which sounds super lazy, but I just know that I’ve burnt more than a few calories anxiously watching athletes go for gold. Anxiety is an ab workout right? This TV “workout” was fueled by some roasty-toasty broccoli and sweet Farmhouse carrots that I happened on hand. I completed the meal with the help of some pantry ingredients: chickpeas, jarred roasted red peppers, tahini, etc. Feel free to switch up the vegetables and add some sort…

Brussels Sprout, Broccoli & Avocado Rice

Brussels sprouts, broccolini & scallions tossed with a tangy & spicy citrus sriracha dressing and topped with creamy avocado! (Gluten-free, Vegan option).

I’m pretty sure this one covers all of my major food groups: green vegetables, avocado, almonds, mint, lime & sriracha. In fact, I could probably stop right here and live happily ever after. I could change our name to The Brussels Sprout Blog and take pictures of this dish – every day – just in a different bowl (you know, to keep things exciting). Of course, I’m kidding, but I do really love this combo. What really pulls it together is the fish sauce (don’t worry, if you’re vegetarian you can sub it out), but it really brings the most amazing…

Chili-Orange Veggie Bowl

I steam the veggies instead of roasting them in this easy bowl, and their clean flavors shine under a lightly spicy, tangy chili vinaigrette.

If you had asked me two weeks ago about the best way to cook (flavorful) veggies, my unwavering answer would have been: roast them. I’m a sucker for all things roasty, toasty, caramelized, slightly crisp and even a tad bit charred… the simple steamed veggie is just a bit, well, simple for me. That is, until now… Our oven went kaput a few weeks ago and I was forced to get a little creative. (Although, thank you Thermador for coming to the rescue!). My little oven haitus seemed miserable at first, but it’s in fact incidents like these that force me to think outside…

Cauliflower Crust Pizza, Part 2

Lighten up your pizza with this healthier version of pizza crust made with cauliflower, almond flour, and eggs. Top as desired! Gluten and dairy free.

This is part two of the cauliflower crust pizza post from the other day. I had wanted to try this again as a vegan version using flax in the crust instead of eggs (and figure out how to make it not fall apart). I haven’t gotten around to that yet (I’ll report back when I do), but this version is entirely dairy-free. I topped it with leftover kale pesto that I had stored away in my freezer along with some sautéed broccolini, roasted tomatoes, and pine nuts. I could have posted these two pizzas as “his and hers” versions. To Jack’s benefit,…

Roasted Broccoli & Cranberry Salad

A delicious 30-minute salad for healthy weeknight dinners in fall or spring. Tossed with a bright Apple Cider and Honey Vinaigrette. Gluten free.

This is my perfect weeknight salad. I like to start the week off on the lighter side… less bread, less starch. It often goes downhill from there… by Thursday it could be all cakes & cocktails, but come Monday it’s time to get it back together. Which still doesn’t mean eating bland food! I love this salad for its balance of bright flavors and variety of textures: the salty ricotta salata, a pop of tartness from the dried cranberries, a meaty bite from the roasted broccoli, crunch from the pine nuts. It’s brought together with a simple sweet & mellow apple cider…
