I love your recipes and your light, bright way of approaching cuisine, and this one is no exception!
As a Californian who has seen the water crisis and how much water almond trees need -- and has seen, too, how much CA farmland has been pulled up and replanted with almond trees to satiate the demand specifically of US almond milk production, I always feel a pang when wonderful recipes champion almond milk rather than, say, oat milk, which is a far more ecologically sustainable crop for non-dairy alternatives.
Please hear my comment as a totally biased one: I am a fanatic about this issue. And I say all this with, as I mentioned, utmost respect for your work. Thank you for what you do!

Matcha.com matcha is my favorite! I make it with homemade cashew or almond milk and tastes great and doesn’t give me caffeine jitters. Do you sift yours?
