I agree with the comments that this is way too dense for a burger bun. I hadn’t even finished the first rise but just by hand kneading I can tell the flour to water ratio is not correct. I even held back half the whole wheat flour as I was weary of the recipe. I added about 1/4 extra water and extra butter during the kneading to help with the density. I am a very experienced baker and would not recommend this recipe for someone who is beginner and cannot adjust based on understanding dough density.

Followed the recipe exact (used olive oil instead of butter). Very easy to make and my 22yr old son said they were the best burger buns he has ever eaten! Believe me, that's quite an endorsement!

I just made this dough, weighed my flour, and followed directions, and I agree. I used my Kitchenaid, and the dough was very dense and tough, maybe too much fllour?
It is in the 1 hr rising phase now….I am hoping it will rise!!

Love this site for recipes but this one was not very good. I’m so sorry! These buns were not soft and airy. I really didn’t like the texture or the taste at all. Maybe it was the wheat flour? I don’t know but I would not make these again. Sorry guys I have to be honest. I weighed every ingredient and followed the recipe step by step and these were a let down.

Great recipe! These buns came out absolutely perfect! I have started weighing most of my ingredients which I have found very helpful, especially when baking. I used 420 g AP flour-no whole wheat flour on hand. I followed everything else to a T and ended up with buns that were perfect in texture!
