Are you feeling as stuffed as I am? This year we actually celebrated Thanksgiving a week early with Jack’s family – yet I’m still full from his mom’s amazing apple pie and the leftovers we’ve been snacking on all week.

This weekend, I’m craving food that’s a little bit healthier but still comforting and delicious so I thought I’d share just a few ideas:

  4. I love Spaghetti Squash but I always forget to buy some. I’m better about buying Butternut because I can get it pre-cubed at the supermarket!

    Gosh, thank you so much for including me on your squash roundup. 🙂 Wanted to let you know I made your brussels + apple salad for Thanksgiving (it was a quiet one just with my husband) and we LOVED it. It was my first time using the mandolin to shave brussels and what a difference in comparison to trying to slice thinly with a knife, haha.
