Raise your hand if you may have had a little too much chocolate and red wine yesterday while celebrating Valentine’s Day. Suffice it to say, I’m getting a slow start to my week, but I plan to recover by catching up on my vegetable intake over the next few days. Here are a few delicious vegan dinners that are favorites in our house. I hope you love them too!

  4. I definitely had way too much! I’m actually considering trying vegan for a short while to see how I feel 🙂 I love trying the recipes here anyway so at least I know I’m going to be eating delicious food!

  5. I have to admit, I get overwhelmed when you do these recipe lineups because I literally want to make everything, usually. 😉 Guess that’s a good problem to have though. And I can vouch for how good that spinach mac & cheese is!!
