Great recipe! I made it exactly as listed with a few adjustments for baking at altitude (high protein flour - 2 cups and 7/8 t. baking soda, 2 tblsp. less syrup, quarter cup extra banana for moisture). Baked at 350. Muffins look beautiful and taste great (per my husband)!

Hi Laura, you can use either - refined coconut oil has a neutral flavor, unrefined will taste like coconut.

Thank you for the recipe! I went to make banana bread/muffins (or zucchini bread) and my Pilsbury Cookbook called for a cup of sugar. I closed the book and didn’t make any thing since the sugar was so high. I look forward to trying this out.
Are you using refined or unrefined coconut oil?

Hi, Kala,

Unfortunately for no-sugar recipe seekers, the nutrition label on this recipe specifies 13 grams of sugar, which is mostly from the maple syrup. The sugar that's in maple syrup is chemically identical to granulated sugar in its effects on the human body. Granulated sugar weighs 4 grams per teaspoon. Thirteen grams of sugar equals 3 tablespoons plus 1/4 teaspoon, *per muffin*.
