Delicious soup. I cannot eat onion or cayenne, so omitted them. I adore cardamom, so added 1 teaspoon. The end result was very thick, but I left it that way as I did not want to dilute or alter the flavour by adding water or stock.

The combination of flavours is delicious, and the coconut milk adds such a lovely silky touch to it. However! This recipe is in much need of adding important details.
Such as.. A can of coconut milk… How many oz?
Roast the onion and apples…. Should the apples be peeled prior or after roasting them?
What variety of apples should be used?
Store in the refrigerator for a few days…. How many days?
Should the apples once roasted be added to the blender with its peels?
Coconut milk, sweetened or unsweetened?

This was delicious- I had 3rds. Did not have coconut milk on hand so I used veggie broth powder and water. The cardamom was key. Also added a few drops of orange oil and about an inch worth of ginger root grated. Thank you!

This soup was amazing! What a great way to get in the fall spirit and warm us up on a cold, rainy night! I don't know how many people it's supposed to feed, but my husband and I definitely polished it off in one meal. Hoping I have enough leftover pumpkin for a second batch ;)

Hi Sarah, I would use broth (any kind) and maybe add a splash of cream at the end. Hope that helps!

I wanted to love this, but I think the proportions were off. Two cups of pumpkin to one CAN of coconut milk resulted in an extremely rich soup that tasted predominantly of coconut.
