This enchilada Verdes was a smash hit in our house! The next day it was even better, if possible!! No one even missed the meat as the tomatillo sauce was to die for!! I did add an extra jalapeño and extra garlic along with Anaheim peppers.

Love this veggie spin on enchiladas verdes, the tomatillo sauce sounds so bright and fresh, and I love that the filling uses beans and roasted veggies for a cozy-yet-light dinner. The mix of creamy pinto beans, cauliflower and jalapeño gives great texture and the toppings sound perfect. Also this recipe totally made me think of deez nuts nuts in the sense that I’d want to share this with friends and watch them dig in while joking around about snacks and cravings. Thanks for sharing!
