This salad is so frickin good! The combination of flavors is incredible. I’ve been making it for basically two weeks straight… the roasted veggies keep really well in the refrigerator and soak up the flavors of the vinaigrette. I’ve been adding chickpeas and pasta to make it into a lunch. I’ve always had a hard time with eggplant but this is easy and turns out great – it’s going into my regular rotation of recipes!

Yum. Made this last night and it was spectacular.
I didn’t have za’atar so used pizza herbs. I guess I’ll try it with za’atar, but it was really good anyway..

We have made this recipe countless times and absolutely LOVE it!!!!!! The only thing I did differently from the recipe was to remove the charred skin of the red bell peppers. It is a totally delicious recipe!!!😍😍😍
