Egg-citing Recipes

A roundup of spring egg recipes for easy vegetarian breakfasts, lunches, or dinners!

I hope everyone is having a nice holiday weekend so far. Jack and I are having a really low-key weekend which is our favorite kind lately. We just took a stroll to the farmers market and had a nice lunch… Jack is talking about doing some housework, but we all know that is not going to materialize…

We have no big plans for easter tomorrow but I’m thinking of making one of these yummy looking egg dishes that I’ve had bookmarked…

sun dried tomato and walnut pesto breakfast pizza from Naturally Ella

veggie & egg tower of power from My New Roots

curried tomato sauce with sauteed greens & egg over socca from Good Things Grow

little quinoa patties with poached eggs from Seven Spoons

skinny omelette from 101 Cookbooks

breakfast tacos with avocado radish salsa from The Year in Food

spicy avocado egg stacks from A Couple Cooks

sunny eggs + mustard-creamed chard from Sprouted Kitchen

Thanks for the recipes! I’m looking forward to playing more with eggs now, after we peel off their dyed exterior of course 🙂
