Ginger Miso Dressing

This zippy miso salad dressing is a great way to brighten up quick salads, grain bowls, and simple steamed veggies. Prep it over the weekend, and use it all week long!

Serves: just over ½ cup
Ingredients
  • 3 tablespoons extra-virgin olive oil
  • 2 garlic cloves, minced
  • 2 teaspoons freshly grated ginger
  • ¼ cup fresh lemon juice
  • ¼ cup fresh clementine juice (or fresh orange juice)
  • 1 tablespoon white miso paste*
Instructions
  1. Whisk all ingredients together. Taste and adjust seasonings, adding more miso (or a pinch of salt) if you would like your dressing more salty. I find this dressing to taste a bit punchy, but it mellows once poured over vegetables.
  2. Store any remaining dressing in the fridge.
Notes
*I used this kind and I've been able to find it at most grocery stores,
(sometimes you have to ask where it is). It keeps in the fridge for about a year.
