I have not made this but was wondering if you can make it without mushrooms, as I really cannot do mushrooms.

Love love love this soup. The first time the dumplings broke up so the second time I cooked the dumplings separately and added them after adding the spinach, rice wine, and lime juice.. I also made this with kale.

I made this with the unaltered ingredient list but put it in the Insta Pot for 10 minutes, then stirred in the spinach. It was OK, but needed more spice for my taste. Sorry I used veggie broth, should have used chicken and some Schewan pepper, possibly Fish Sauce. I used pork dumplings. OK for a cold day, quick and easy.
