Followed recipe to the letter. It made 10 muffins. I tasted one right out of the oven and first impression was: nice texture, just the right amount of sweetness, but too much rosemary for my taste buds. I would cut that amount in half if I make them again. Very much liked that the recipe is vegan!

The only issue I have is the Canola Oil, which clogs the arteries and is not even a plant, it comes from RAPESEED which is used in industrial situations and was GMO'd to be what they now call Canola Oil. Most vegans I know would never touch Canola Oil. The best is pure extra virgin organic Olive Oil that you know where it is processed and grown. All these oils go bad at some point so buying local is the best. Or pure organic coconut oil. Mike Adams the Health Ranger has done many articles and videos on the dangers of Canola Oil. Just set it in the sun and see what happens - same to your arteries.

Hi Barbara, I don't really think they'd work with 100% cornmeal - I think they'd either be gritty or fall apart, especially since this recipe doesn't have eggs.

Have you ever made these using only cornmeal? My brother makes a skillet cornbread that uses only cornmeal, but it also uses buttermilk? I've used gluten free flour, and these muffins are GOOD (I've made them several times) AND they are also a little heavier/more dense than I like.! Just curious... Thks
