Huge corn pizza fan here and have been making it for years. I usually use a thin layer of red sauce, fresh mozzarella and fresh basil is a must. Using basil pesto is inspired and I’m going to try that. Haven’t used smoked paprika, but it’s a great idea that I’ll steal as well! Lemon zest isn’t my thing, but I can see how it would brighten and freshen the pizza.
