I first had elotes on Mallory Square in Key West. I have been obsessed with all things Mexican street corn since. I have made corn on the cob, pasta salad, and dips that are all inspired by Mexican street corn.
This is delicious. Using the yogurt is a game changer. I made one dip that involved cream cheese and it was too heavy. This is fantastic.
My husband has avocado trees growing on the property where he is an administrator and he brought home a couple of them on Thursday. I mashed one of them into the yogurt and sliced up the other one to add to this last night.
We made a meal out of this. I even grabbed a small tortilla and smeared a bunch of this dip in it, then rolled it up and ate it like that.

Delicious dip! If you want to make it when fresh corn is not in season, use a bag or 2 of frozen charred corn kernels, thawed.. I buy mine at Trader Joe’s, but there may be other brands as well.

By the way, I’ve been making this for the past two years and it’s always a crowd pleaser. I love that it’s a healthier alternative as well. It’s become a party staple at our house!
