This was tasty. I didn’t have cornstarch, so my shallots didn’t crisp up, but the coconut cream still thickened up nicely.

We LOVE this recipe! I first made it last thanksgiving exactly as written. Recently I made it with spinach, kale and turnip greens which was also good. And today I used portabello mushrooms, fresh and frozen spinach and threw in some leftover cooked farro. It made a delicious risotto like main dish for our dinner. Thank you!

Just trying to figure out what protein will compliment the spinach . Maybe use the creamed spinach on top of salmon ?

I skipped frying shallots (didn’t have any and too much hassle), but this was delicious!! Used frozen spinach so that I could make a lot more easily and sweet yellow onion as I didn’t have shallots — but it was fantastic. Also only used the coconut cream so didn’t need any cornstarch. Served it with brown butter scallops. Thanks for the recipe!

In reply to Kate. Hi Kate, store-bought almond milk isn't as fatty and thick so it doesn't mimic texture of heavy cream and it was too watery. I'm sure it could be done with (thicker than normal) homemade nut milk.

In reply to jeanine. Hi Jeanine, We just had this with the coconut milk and though it was very tasty, it was a bit too coconutty for us. What was wrong with the almond milk version?
