Thanks so much for sharing this recipe– I looked it up the other week when the grocery budget was extra thin, and I had almost nothing but dried pantry goods to work with. This not only fit the bill perfectly for what I had on hand, but also made delicious leftovers for the next three days. It reheats perfectly, and it was so good I didn’t even mind eating the same thing repeatedly.

Last time I had all the ingredients except the spinach, so I sadly had to go without the greens, but it still came out great. I just made it again, today, this time with the spinach as intended, and I made it a double batch. It’s just as good as I remember. This one will definitely be going in the rotation; it’s a keeper!! Thanks again!!

Not sure what I did wrong. I used coconut milk(can) from Wholefoods and it curdled up. Will try again with another brand.
