This is one of the best roasted cauliflower dishes ever! We hosted a vegetarian meal with wine pairings and this dish was on the menu…it was the biggest hit of the night. The arugula pesto was the perfect match for the cauliflower and the topping was delicious. I am making it again for a few friends coming over…this dish could easily convert meat eaters into vegetarians very easily!!! Enjoyed it so much…

This was so tasty and easy. For the topping I just used rukola, pine nuts and cranberries, since I did not have the other ingredients. I also roasted the unused cauliflower along the steaks and plan to eat it the same way.

This recipe was utterly awesome!! The arugula pesto with cashews was amazing and the topping mixture of pine nuts capers raisins etc. was incredibly delicious!! I LOVE vegetables but, this recipe was fantastic !!!

What if I don’t have a blender to puree the beans and broth? Can I mash the beans with a potato masher and then use a hand mixer to blend it together with the broth?
