Saffron Couscous & Spinach Stew

Valentine’s Day doesn’t have to be all about fancy cooking and elaborate meals. If pasta making sounds too stressful, try this cozy one-pot stew that’s perfect for two. (With maybe a little leftover, if you eat less than we do). It doesn’t get much easier than this – sauté leeks and mushrooms in an oven-safe pot or this adorable heart shaped one. Add tomatoes, chickpeas, couscous and – the fancy part – a few pinches of saffron. Yes, saffron is expensive but a little goes a long way. Plus, it’s Valentine’s Day so let’s live a little. Pop it in the oven and bake…

Rainbow Chard Bowls

These rainbow chard bowls are a delicious weeknight dinner! With 10 ingredients, they're easy to make, but they pack a punch of flavor.

As a kid, I was obsessed with everything rainbow – my Rainbow Brite doll, a fresh new Crayola 64 pack (with built in sharpener!), and best of all – the rainbow-neon terminal at O’Hare airport. Pure magic. Nowadays, I have a new grownup rainbow obsession: rainbow chard. Cooking with Rainbow Chard If you’ve never cooked with rainbow chard before, it has a slightly bitter, earthy taste that I love to pair with sweet, tangy, and nutty accents. Aside from its gorgeous vibrant color, it has a special superpower: it’s kind of two vegetables in one! Not only can you use the chard leaves, but…

Pear & Arugula Chickpea Salad

Meet this salad: your new favorite winter lunch. Just 7 ingredients, sweet, tangy, fresh, and hearty, yet healthy. You'll love this one.

I realize this post might not be the most timely. If you’re snowed in, chances are you’re not reaching for a cold salad – BUT it’s not snowing here and nothing will ever stop me from craving big bright salads for lunch. (If you need something hot today, click here, here, or here). My lunch salads are what I would call “kitchen sink” style. I toss whatever veggies I happen to have into a bowl… often with chickpeas and a bit of feta cheese or a scoop of hummus. For crunch, I add toasted nuts and/or hemp seeds. And to bring it all together…

Goji & Mango Guacamole

Even if you're a guac purist, you'll love this mango guacamole. Sweet goji berries, mango & lime cut through the avocado, making for a light, fresh dip.

Hi everyone, Jack here again. Super Bowl Sunday is right around the corner and you know what that means? Dip! Even though I’m not traditionally in love with avocado, I love the way Jeanine makes guacamole, and plus, nothing says “go team” like go-ji, right? Right? Now you may be thinking “oh, Jeanine has Jack writing this because he’s a football man or something.” Well, I have to admit, team sports are not my thing. Three things that ARE my thing, and the reasons I’m manning this post, are Super Bowl parties, food dipped in other food, and goji puns. This mango…

Green Quesadillas

In this frigid weather, nothing sounds better to me than soups and sandwiches. But if you’re like me and you keep tortillas on hand more regularly than bread – quesadillas are the perfect little soup or salad accompaniment. I always love to sneak a few greens into my food but today there’s no hiding it. These green-on-green-on-green quesadillas start with spinach tortillas that I stuffed with cheese, jalapeños, cilantro and sliced collard greens (feel free to sub spinach, kale, or whatever you have on hand)… and pickled shallots for a bright tangy bite. These are especially good with our Spicy Black Bean Soup.

Jalapeño Cauliflower Mac & Cheese

Jalapeño mac and cheese is perfect for warming up on winter weeknights. With roasted cauliflower & fresh kale, it's filling, simple & nutritious.

Hi everyone, Jack here reporting in from the frozen tundra of Chicago. We flew in for a quick weekend over Jeanine’s birthday (happy birthday!!!) and it is just beyond cold. Austin’s apparently snowing today, but still, not much prepares you for walking outside into 9ºF (-13ºC) weather from a nice, warm airport. This blog is almost always about making meals completely from scratch, but it’s cold times like this that sometimes you just want to pour a box of mac and cheese into a pot and go to town. Well we did that, posted a photo here on Instagram, and people went crazy for…

Ginger Miso Soup with Soba & Turnips

This nourishing ginger miso soup recipe is filled with shiitakes, turnips, tofu, carrots & soba noodles. A delicious healthy lunch.

I’ve had this miso soup in the queue for a little while now. Which isn’t normally the way I work, but I knew this humble healthy soup would get little love in between all of the sparkly & sprinkle-y holiday recipe madness. So I saved it especially for this week, which is otherwise known as the soupiest, salad-iest week on the internet. Inspired by our love of Japanese cooking, this recipe is nourishing, light, and refreshing – perfect for a winter reset. Miso Soup Ingredients Here’s what I use to make this healthy miso soup: Kombu. Kombu is dried seaweed used to make…

Vegan Kale & Artichoke Dip

Vegan Kale & Artichoke dip is a healthy spin on the classic spinach artichoke dip. It's the perfect appetizer for holiday parties or winter gatherings!

Hey all, Jack here – now that it’s the end of the year, it’s holiday party time! And what does it normally mean to eat at a party in the winter? To a lot of Americans, that means spinach artichoke dip. I mean, what makes you feel like partying more than eating an entire loaf of bread dipped in cream cheese and mayonnaise? Well, Jeanine and I don’t really think that’s much of a party any more. Our idea of a party is one where the next day you (or your guests) don’t feel awful. So we took a bit of…

Matcha White Hot Chocolate

A delicious, grown-up winter treat, this Matcha White Hot Chocolate is an easy, cozy drink for cold days. 4 ingredients and full of healthy antioxidants!

Hot chocolate always has to come with warm fuzzy memories, doesn’t it? I vividly remember being about 9 – otherwise known as the age when snow was fun. My sister and I would spend hours and hours building forts and making snow angels. We’d come in the house with red noses and leave our snowpants in a puddle at the door (you know, for mom to clean up). We’d sit down to mugs of Swiss Miss hot chocolate, no marshmallows for me. I might not have wintery white Christmases anymore, but here’s my fancy adult white hot chocolate that’s made oh…

Spaghetti Squash w/ Chickpeas & Kale

Sun-dried tomatoes give this vegan spaghetti squash recipe a savory pop. Hearty from chickpeas & kale, it's a great fall or winter weeknight dinner.

The first time I had spaghetti squash, it was served with a big scoop of store-bought marinara sauce mixed in. It was slimy and goop-y and decidedly not spaghetti-like. About a month ago, ditching the pasta idea completely, I planned a post for bbq spaghetti squash tacos. I have a super cute photo to prove that the meal existed, but the recipe ended in total disaster. So, long story short, I’ve learned that I prefer my spaghetti squash as simple as possible and most importantly: sauce-less. The roasted strands come out of the oven with a nice al-dente bite, but, smothered in sauce, they become just too mushy…

Vegan French Toast

No eggs? No problem. This easy Vegan French Toast is delicious made with almond milk, cinnamon, nutmeg, maple, nutritional yeast, and a little flour.

vegan french toast / loveandlemons.com

The first year Jack and I were together, he was working in Austin while I was finishing college in Chicago. He’d come visit me nearly once a month. It feels like such long time ago now (11 years, yikes)… many of those early memories are fuzzy, but a few stand out. Friday nights, I would take the blue line to the airport to “pick him up” and we’d ride back to the city together. I was always late, he was always mad (or madly in love, ha).  Saturday mornings, we would head to the Pick Me Up Cafe where he…
