Shells & Brussels Sprouts

shells & brussels sprouts / loveandlemons.com

Growing up, I was made to eat vegetables just as much as the next kid. Broccoli was at the top of my hate list, closely followed by mushy cooked carrots (one of the only veggies I still won’t eat). But I never had to face brussels sprouts. My mom didn’t like them as a child, so she never subjected them to our family. I felt lucky about this… if the adults in my family wouldn’t eat them, they must be that bad. I don’t know what prompted brussels sprouts to go from America’s most hated veggie to darn near the most loved one, but…

Walnut-Mushroom Veggie Burgers

I’m so excited to be guest posting this recipe on A Cup of Jo’s “best you’ll ever have” series. Although, I have to say, it was a little bit daunting to come up with something that was going to be called “the best.” Of course we think this veggie burger is the best we’ve ever had… but since tastes are subjective, I’m hoping you at least find this to be “a pretty darn good one.” While I love both chickpea and black bean patties, I didn’t go that route because I don’t love them between bread… they can get a…

Apple Pancake

This thick, custardy baked apple pancake takes me straight back to my childhood. Dust it with powdered sugar for a sweet finishing touch & dig in!

My sister and I used to beg my mom for things like Fruity Pebbles and Frosted Flakes. She didn’t cave often, but I remember the few times she did… she’d sigh and say, “If I buy this, are you really going to eat it this time?” We’d smile and nod, excited to be taking home the same colorful boxes our friends had. We’d each eat maybe one bowl full. Then up in the pantry it would go… to collect dust and then ultimately get tossed in the next pantry clean-out. The smiling kids on Saturday morning commercials would convince us…

Brussels Sprout & Sunchoke Salad

What's your favorite sunchoke recipe? Do you have one? I love this caramelized sunchoke & Brussels sprout salad - a perfect light winter meal.

It’s hardly winter in Austin anymore, but I’m still trying to keep all of you snowbirds in mind. Enter: the winter sunchoke salad. This sunchoke recipe is full of warm, roasty goodness and brightened up with a tangy lemon dressing. Cooking with sunchokes Have you cooked with sunchokes? Do you have a sunchoke recipe to recommend? They’re new to me, but I just love them, so I was eager to develop a sunchoke recipe of my own. Sunchokes, also known as Jerusalem artichokes, have a potato-like quality. I like them both thinly sliced and roasted or sautéed with butter and…

Chipotle Shrimp Tacos

Fish tacos with a spicy creamy chipotle aioli.

Chipotle Shrimp Tacos // loveandlemons.com

I have some guilty confessions relating to this meal: 1. This might seem un-characteristic, given my general healthy habits but I love mayo. And I have an unhealthy addiction to Japanese Kewpie Mayo. If I had to choose 5 things to bring to a desert island, that just might be one of them. Along with a few chipotles to make this sauce. 2. I made these tacos all for myself one night last week while Jack worked late… catching up on my guiltiest of guilty tv shows… The Bachelor, which I had proudly avoided for weeks… and Smash, a show…

Carrot Muffins with Coconut Whip

Healthy non-dairy muffins packed with carrots and topped with coconut whipped cream.

Spring is in the air (at least, here in Austin it is), and I’ve been getting non-stop carrots in my Farmhouse Delivery box. Which means one thing to us… carrot cake. This time, in muffin form. I topped these with coconut whip lightly sweetened with maple syrup. It’s airy, yet creamy… much less indulgent than a more traditional cream cheese frosting, but it was exactly what I was in the mood for this time. With a dusting of cinnamon on top.

Chocolate Almond Breeze Smoothie

Rich & creamy chocolate smoothies made with banana and almond milk. Vegan and Gluten free.

Chocolate & Almond Smoothie // loveandlemons.com

Now that January is over and Valentine’s Day is just around the corner, I think it’s time to trade in our kale drinks for rich & creamy chocolate-y treats. Because we’ve been good after-all… haven’t we? Something you might not expect that’s a fixture in our fridge is chocolate almond milk. Jack drinks a mocha with it every morning. And he occasionally makes us milk-less milkshakes (kindly accommodating for my my lactose intolerance). He doesn’t cook often but two of his designated tasks are: 1. Coffee Pour-er, and 2. Blender-man. This is his most recent blended treat… frozen bananas with chocolate almond milk and…

Butternut Squash Croquettes

Butternut Squash Croquettes - these healthy baked veggie fritters are a delicious appetizer or snack.

Butternut Squash Croquettes // loveandlemons.com

I don’t have much of a weakness for fried foods. French fries don’t make me crazy, I never really cared for fried chicken… but whenever we’re on vacation, I find myself ordering little balls of fried stuff everywhere we turn. Cod croquettes in Japan, arancini in Italy, and all kinds mashed veggie fritters (with tangy yogurt sauces) in London. Since we’re currently not on vacation, these are baked, not fried… but I promise they’re so good that you likely won’t even notice. I mash creamy butternut squash with cumin and smoky paprika, mix in some tangy feta, and serve them…

Chocolate Cupcakes & Avocado Icing

These vegan chocolate cupcakes are a healthier dessert. The avocado icing is so rich and yummy you'll want to eat it by the spoonful!

Vegan Chocolate Cupcakes / loveandlemons.com

It’s my birthday and I baked myself a cake. Actually, cupcakes… and technically I baked them last night so I could make this little b-day post today. I’m thirty-four today (ouch, that hurts to type). It’s the age that you start to forget what age you are… the age when you realize how silly you were when you felt old at 28. And it’s the age that you have to start taking really good notes because you just can’t keep “it all” in your head anymore. They say avocados and chocolate are brain foods right? (I don’t know who says,…

Curried Sweet Potato Soup

Curried Sweet Potato Soup / loveandlemons.com

Thank you all so much for the sweet birthday wishes yesterday. I had a great day, although today is even better because the sun is shining for the first time in 3 days.. (I know, I’m so spoiled living where I do). Dreary weather just gets me so down… But it takes a few gloomy days to feel grateful for the gorgeous days… and if it weren’t for the occasional grey sky, I probably wouldn’t make as much soup as I do. We’ve been eating this one all week. It’s so hearty, warming and surprisingly easy. We’ve got just over…

Happy New Year! Do you all make resolutions? In the past I haven’t, but this year, I’m going to give it a go. (And I’m thinking if I write them here, maybe I’ll feel some sense of accountability). 1. Learn Italian. So far, I can read most restaurant menus, I can order gelato… I can ask for directions… but I’d love to be able to have an actual conversation. 2. Send back wedding rsvp cards, and mail out baby gifts on time. I’m the worst… I’m the friend that shows up to your baby shower with a printout from Amazon.com of…
