Pumpkin Spiced Corn Muffins

Pumpkin makes these spiced corn muffins lightly sweet. On their own, they're a delicious breakfast, but they're also good with a hot bowl of soup.

Currently, I’m sitting inside with three shirts on, one scarf, and one coat. I’ve been in Chicago for the last few days visiting my family, and it’s no surprise that I showed up just in time for the first snow. It always knows when I’m coming. In my parents’ house, there are 3 options to get warm – first, don’t take your coat off, and second, turn up the heat when no one is looking… but by far the most effective method is to BAKE. Crank that oven and when you’re done leave it open to feel every last bit of…

Pumpkin Avocado Tostadas

Pumpkin Avocado Tostadas are a fun fall snack or weeknight dinner! Topped with chile pumpkin spread, sliced avocado & lime. Healthy, vegan & gluten-free.

“They” say you should eat an apple a day – but according to everyone’s Instagram feeds these days, I think we can all agree that the almighty avocado is the way to go. I don’t care if they’re trendy or not, the good fat that you get from avocados always makes for a delicious, nutrient-dense meal or mid-day snack. In an effort not to show you yet another version of avocado toast – I have the next best thing – the avocado tostada. It’s like avocado toast in disguise. I baked organic corn tortillas until crispy, layered them with an…

Healthy after school snacks

Ok, so I don’t go to school nor do I have a child that goes to school… BUT I still have a healthy appetite for a good snack once 3pm rolls around. Here are some of my favorite heatlhy/healthier go-to treats… If you’re packing lunch boxes, some of these will work there too: Vegan Chocolate Chip Cookies (these are made with coconut oil!) Strawberry Avocado Toast (use other fruits if you don’t have strawberries) Maple Walnut Granola Peanut Butter Crispy Treats (a healthier no-marshmallow vegan version) Rainbow Smoothies Carrot Hummus (not sure if your kid will eat collards, but the hummus…

Fig, Feta & Mint Crostini

This fig, feta & mint crostini is a delicious healthy snack or party appetizer! With just 7 ingredients, it's easy to make. Vegan option included.

I don’t know anyone who doesn’t like figs – they’re so sweet and unassuming – but I avoided them for years due to my childhood dislike of Fig Newtons. I was just never a fan of that packaged fig flavor. Later, I came to realize (of course!) that fresh figs are amazing. They’re in season now, and their season is short, so you should go find some. When I have fresh figs, they only seem to last a day (maybe two) so I usually make something really simple with them. Figs, feta, and mint are a delicious combination, so I love them in these little sweet &…

Curried Chickpea Salad Sliders

Three things I am obsessed with: chickpeas, avocado, and all things MINI… mini pizzas, mini tacos, mini pies, mini skillets. I had these cute little pretzel buns last week so that’s how this recipe started. (Although you could use any kind of bun or sliced bread for this recipe). I first thought of making little veggie burgers, but since it’s a whopping 103 degrees(!) outside, I’ve been trying to use my oven as little as possible. Plus this chickpea salad is fast, easy, and cold, which is everything I want in a summer recipe. These would be perfect for a summer picnic except, well, it’s…

Smoky Sweet Corn Tostadas

Make this easy vegan tostada recipe for a smoky, fun & fresh summer lunch. If you have leftover hummus, store it in the fridge for a quick, healthy snack!

Happy August! I hope corn is in season where you are, because I have a pretty corny tostada recipe today. Let’s just say that I decided to go for the corn trifecta. I started by making some sweet and smoky corn hummus that is a great snack on its own. Then I slathered it onto crispy (baked) corn tortillas. Finally, I topped these with avocado and MORE grilled corn because, well, I was up to my ears in fresh summer corn, and I had to use it somehow. After spending the month of July eating pasta, I feel like a I needed a Texas re-tox.…

Peach & Plum Crumble

When peaches are in season, there's nothing I crave more than this peach crisp. Nutty, oaty, juicy & sweet, it's easy to make & absolutely delicious.

This may be sacrilege, but over the years, I’ve become less and less interested in chocolate desserts and more and more obsessed with fruit ones. And right now, fruit crisps – like this peach crisp recipe – are my absolute favorites. They’re SO easy to throw together, they let seasonal produce shine, and to me, there’s nothing more delicious than a nutty, oaty crumble with juicy baked fruit and a scoop of vanilla ice cream. Peach Crisp Recipe Ingredients Now that peaches are in peak season, this peach crisp has been on repeat in our house. At this time of…

Erin’s Adobo Eggplant Quesadillas

Ciao from Italia! At the moment, our life is all about pizza, pasta and tomatoes. It’s amazing but every time I travel, the things I miss most are tacos and mexican-ish food. We made these quesadillas a few weeks ago but I could totally go for one right now! I often get questions about how to cook eggplant. My favorite and most foolproof method for non-spongy eggplant is to grill it. (If you don’t have an outdoor grill, you can use a grill pan on your stove). I grill mine simply with olive oil, salt and pepper, and a squeeze of lemon or drizzle…

Mix & Match Mini Pizzas

If you’ve been following for long, you know that I have a slight obsession for all things that are mini. Mini skillets, mini pies, mini tacos – but my absolute favorite small food has to be mini pizzas. They’re quick and easy to make and a fun way to try lots of different toppings. These would be great for a summer party – you could even toss these little guys on the grill if you don’t want to heat up your house. The first step to your mini pizza party is mini naan – I buy Stonefire Mini Naan all the time –…

Peach & Tomato Crostini

Lately I’ve been reading all kinds of summer bucket lists that are floating around the internet. I enjoy them – they inspire me to get away from the computer and do fun things like hang out at pools with popsicles. (which I haven’t actually done, but the idea still lifts my spirit). For me, summer + list-making don’t go hand-in-hand, so I’ll just make one goal and that is to eat ALL of the peaches. I freaking love peaches. Their season is happening here and now in Texas so I’m I making the most of it with things like peach salads, peach salsa, and peach pops, just to…

Strawberry Basil Avocado Toast

My favorite avocado toast recipe! Creamy avocado, balsamic strawberries, and fresh basil make the perfect fresh toppings for this light spring lunch.

There are some food trends that I wish would end (sorry, oatmeal). There are others that I hope never end – like avocado toast. In my opinion, this one’s not going anywhere simply because avocados are awesome. And I’m totally fine with that. A few months ago, I posted a fall/winter version of my favorite smushed green snack and now here’s my spring take on the classic. I love the sweet/salty/creamy combination of avocado, coarse sea salt and strawberries. These are delightful little appetizer bites (or, for me, lunch), that take 2 minutes to put together. Don’t forget the fresh basil! My Best Tips for Perfect Avocado…
