Avocado & Pomegranate Crostini

Avocado, pomegranate and feta make a pretty holiday appetizer crostini.

‘Tis the season for sugary, buttery treats… but as you may know, I’m not big on butter. I’m also not particularly good at holiday traditions… Maybe it’s the Austin influence, but I love anything with avocado. I made this glorified guacamole and I think the little pomegranate gems make it especially festive. Only thing missing in this picture is a merry Christmas margarita. For a healthier version, this would be delicious on endive spears. For a less healthy (but gluten free) version, feel free to break out the tortilla chips.

Quinoa Quesadillas

Happy day-after Halloween, who’s ready to cook? No one… That’s what I thought. So before we head to Thanksgiving Town, I thought I’d share another quick and easy (and tasty) meal you can throw together using last night’s leftovers… Just like the picture says – take your leftovers from this salad, add some black beans (maybe a few more spices), and some cheese… fold it into tortillas… then dig in to some pretty hearty & healthy quesadillas. Of course, cook these on your stovetop and not on your marble countertop.

Miso Sesame Squash Salad

Does anyone else have a fascination with grocery stores in other countries? In Japan, we spent lots of time at food markets, but we spent countless hours wandering the aisles of grocery stores. If you need a reason to try (and love) miso, this is your recipe. I’m hoping eggplant is still in season where you are. Sweet Potato Tahini Crostini

  We got home last week and I immediately started thinking about post-vacation recovery foods. Kale salads, green juices… that sort of thing. That is until Jack announced that he was craving bread. Mango Sesame Avocado Salsa

This wasn’t originally going to be a post, but of course that’s how so many of these things start out. I was making dinner one night last week… the mango salsa I usually make, on top of seared tuna. (thanks to my Aunt Judi for the suggestion!).
