					<description><![CDATA[Oh yummmmmm! I think I have been under-cooking my onions for years and thinking they were caramelized. Boy, this recipe greatly raised my bar. I used the cast iron as recommended, and followed the recipe exactly. 4 normal sized onions, sear/sautéed in the preheated oil, add the salt and cook low and slow while stirring fairly frequently with a wooden scraper. I was determined to go a full 50 minutes, and it was definitely worth it. I wish there were more to enjoy!
