The Butternut squash absolutely needs to be cooked more before you add the rice. Some people have said they put it in the oven to soften it up and I really wish I had done that. It tastes good, but I more than doubled the garlic and more than doubled the sage. I did the squash at different sizes (but none bigger than stated by the recipe) as I wanted it to almost blend into the risotto and then other pieces to give a little more bite, by the time the rice was done even the smallest pieces had a bit of bite, the bigger ones were hard. It was almost a plain risotto with pieces of butternut squash in it rather than a butternut squash risotto if that doesn't sound contradictiorary.

Absolutely scrumptious! Thank you for this wonderful recipe. I cheated a bit and cut the squash in half put it on a cookie sheet in an oven, heated to 350 and turned the oven off and left it a while to cook it slightly and make it easier to cut up.. It was so yummy that I don’t think it hurt the final delectable result.

Perfect! I served it lukewarm on argula salad (tossed with lemon vinegarette), topped with a few pomegranate seeds. A lot of chopping hard, raw squash for old, arthritic hands. Next time, I will try grating with food processor.
