Any recommendations for a more favorable butternut squash? I made soup last week roasted it and it was ok. The recipe is highly rated, and I trust the source. I just never seem to buy a squash that has a lot of flavor. I’m about to give up on this one and will look for another type.

Hi jo, while I love the delicate flavour of butternut squash, I think I can understand that its flavour is too subtle for you. Some suggestions of other squash you should try that are interchangeable (at least in my humble opinion) are:
Kabocha, butterCUP, turban or Hubbard. Good luck!

I love the Roasted Butternut Soup in Dumpling Squash Bowls. The recipe I used was from “the Farm to Table cookbook” by Ivy Manning. It calls for many of the same ingredients as yours, but blended and served in the cute Squash bowls.
