The Casa de Luz origin story genuinely stopped me mid-scroll — there's something quietly beautiful about a restaurant that trusts a single rotating meal to carry the whole day, and I love that it became the blueprint for this recipe. I've been nerding out on fermented foods lately, and the sauerkraut inclusion here is doing more work than people realize: a 2021 study published in *Cell* found that a high-fermented-food diet significantly increases microbiome diversity, which makes that little scoop of Bubbies basically a sleeper MVP of the bowl. I'll admit I've been guilty of treating the pickle component as an afterthought — usually a sad few capers I found in the back of the fridge — so seeing it treated as a deliberate structural pillar is a shift in thinking I needed. The turmeric tahini sauce also has me curious: do you find the turmeric flavor assertive enough to stand on its own, or does it mostly play a supporting role to the tahini's richness?

This is absolutely delicious. Prepped 5 Sunday night in salad bento boxes where I could separate things out and they were fresh and tasty all week long!

Made a couple of substitutions (quinoa for rice, sadly didn’t have radish, and added hemp seeds) and mixed a little extra lemon juice and a touch of olive oil with the quinoa.

Thank you!!!
