Great recipe! I had a HEAP of fresh broccoli heads, so I tripled the recipe with no issues. I also diced up the thicker broccoli stems, boiled them in the stock, and then blended them up before adding it into the soup in step 2. Uses the whole vegetable and adds lots of flavour/creaminess. Orange American cheddar isn't available in my country, so used a blend of white cheddar, mozzarella, and red Leicester. SO GOOD! Will definitely be making this on the regular! Such a tasty comfort meal.

In reply to <a href="https://www.loveandlemons.com/broccoli-cheddar-soup/comment-page-29/#comment-767155">Nancy</a>.

Thanks so much for the suggestion Nancy! Instead of reading all of the instructions on a recipe that I’ve never made before, I dumped all of the cheese in at once resulting in a thin broth full of cheesy vegetables. Using an immersion blender and a few more minutes on the stove completely fixed it :)

We made it in a pot first then transferred it to a crock pot. You need a pot to make the roux anyways and it's super quick to make. Also you need enough time for the veggies to cook - which take a long time in a crock pot. I chopped and measured everything the night before, took 15 mins to make it, let it simmer for 20 mins then transferred to the crock.
