Jeanine, I plan to make this for a crowd of 30. How should I approach? Only double recipe each tine and make 4x?

I know with some recipes it is best to only double the recipe each time?

This is quite delicious & surprising! I recently had major oral surgery & will be on a liquid diet for a few weeks. This is a great addition to the repertoire & a nice departure from the usual gazpachos.

Made this today.. I had no access to leeks, so I used half a Vidalia. Added the juice of a whole lemon, and 1/2 c. additional water. Did not use croutons, as I had a slice of Foccacia with Herbes de Provence. It was a delicious soup, which I will be making again. Thanks for this recipe. Your site, and cookbooks, never disappoint!

My soup came out bitter. It was slightly bitter the first day and today, the 2nd day, it's really unpleasantly bitter. I didn't overcook the garlic. I didn't heat the basil - it went into room temp soup and was blended for only a few seconds. It was kind of an interesting flavor, bitterness notwithstanding, on the first day, but now it just tastes bitter :-(
