This baked oatmeal recipe is a delicious, satisfying breakfast. It’s made with healthy ingredients like fresh fruit, nuts, and whole rolled oats, but it tastes like a treat. The top is toasty and nutty, featuring a layer of pecans and coconut flakes that crisp up beautifully in the oven. The middle, on the other hand, stays soft and creamy. It’s lightly sweet, warmly spiced, and studded with bursty blueberries.
Easy to make in one bowl, this blueberry baked oatmeal is one of my favorite recipes to serve for brunch. It’s a perfect meal prep breakfast too. I love baking it off on a Sunday and reheating slices for breakfast throughout the week. Keep reading to find ingredient substitutions and make-ahead instructions, then try the recipe! I hope you love it as much as I do.

Baked Oatmeal Recipe Ingredients
Here’s what you’ll need to make this healthy baked oatmeal recipe:
- Oats, of course! Whole rolled oats only, please! Quick oats will give the baked oatmeal a mushy texture, whereas steel-cut oats require more moisture and won’t soften in the baking time. Be sure to use certified gluten-free oats if you need this recipe to be gluten-free.
- Mashed banana – For sweetness. It also gives this recipe a slight banana bread-y flavor, which I love.
- Milk – Use any dairy or non-dairy milk you like. Unsweetened almond milk is my go-to, but whole milk, 2%, and oat milk also work well.
- Almond butter – It gives the oatmeal a rich, nutty flavor and helps bind it together. Plus, it adds protein, fiber, and healthy fats, which make this recipe a satisfying breakfast.
- Pure maple syrup – It works with the banana to naturally sweeten the oats.
- Melted coconut oil – For richness. If you’re not vegan, melted butter works too!
- Baking powder – It helps the oatmeal bake puff up slightly in the oven, so it comes out soft and creamy, but not dense.
- Cinnamon – For warm depth of flavor.
- Blueberries – Fresh and frozen are both great. No need to thaw frozen berries before using them!
- Pecans – For nutty crunch.
- Coconut flakes – They create the crispy, toasty topping.
- Brown sugar – It helps the pecan and coconut topping crisp up and caramelize in the oven.
- And sea salt – To make all the flavors pop!

Blueberry Baked Oatmeal Recipe Variations
I hear from readers every week asking about ingredient substitutions for this recipe. So, I recently tested your most-requested variations so that I could confidently recommend substitutions! Here are versions I’ve tested that work well using the same pan size and bake time:
- Almond butter: Replace it with 1 large egg. The egg version has a lighter texture and a less rich flavor. You could also substitute another nut or seed butter like peanut butter or sunflower seed butter.
- Mashed banana: Replace it with 1/2 cup unsweetened applesauce or 2 large eggs.
- Pecans: Replace them with another chopped nut, like walnuts or cashews, or substitute pepitas. You can also omit them.
- Blueberries: Use another berry, like raspberries or chopped strawberries, or replace them with diced apples. 1/2 cup dried fruit, like raisins or dried cranberries, works too. In that case, mix all the dried fruit into the batter, skipping the extra on top.

How to Make Baked Oatmeal
Have I mentioned? This healthy baked oatmeal recipe is super easy to make! You don’t need any special equipment, just a mixing bowl and an 8×8-inch baking dish. Here’s how to make it:
First, mix together the wet ingredients. Mash the banana at the bottom of a large mixing bowl. Then, add the milk, almond butter, maple syrup, and coconut oil and whisk to combine.
Next, add the baking powder, cinnamon, and salt. Whisk again.

Then, add half the blueberries, the oats, and most of the pecans. Use a spatula to stir until the mixture is well-combined.

Transfer the oat mixture to a greased 8×8-inch pan. Use a spatula to spread it in an even layer.

Then, add the topping. Sprinkle on the remaining blueberries, the remaining pecans, and the brown sugar and coconut flakes.

Finally, bake! Transfer to a 350°F oven and bake for 40 to 50 minutes. The topping should be crisp and the middle should be mostly set. You don’t want it to set fully—it should still be a little creamy in the middle.
Let cool for 10 minutes to allow the oatmeal to firm up and the flavors to develop. Then, dig in!
- Tip: To give this baked oatmeal extra staying power, serve it with a dollop of Greek yogurt or your favorite non-dairy yogurt.

How to Store and Make Ahead
To store: This baked oatmeal keeps well in an airtight container in the refrigerator for up to 4 days. I love to meal prep it on the weekend and warm up slices for breakfast throughout the week. It reheats perfectly in the microwave.
To freeze: This baked oatmeal freezes well too. Store it in an airtight container or bag in the freezer for up to 3 months. Let thaw overnight in the fridge before reheating, or defrost in the microwave.
To make ahead: Assemble the casserole the night before, but don’t bake it. Cover and refrigerate overnight. When you’re ready to serve, let stand at room temperature while the oven preheats, then uncover and bake according to the recipe. I love to do this when I serve this recipe for brunch. That way, prep and cleanup are super easy in the morning!

I needed a GF breakfast idea for family visiting with celiac. I looked at several baked oatmeal recipes and yours was so enticing with the coconut, pecans and blueberry combo. It did not disappoint! This recipe is absolutely delicious. I did have to sub 2 items due to not having those ingredients on hand (I followed suggestions in the comments) but I thinking having the almond butter & coconut oil would have made it even better, if that’s possible. 🙂 This recipe will be a regular staple in my home!
I’m so glad it was such a hit!
How much melted butter should I use if I don’t have coconut oil?
Hi Donna, you can still use 1/4 cup!
I make this on repeat almost weekly.
I cut back on the syrup by half. I also reduce the almond milk to 2/3c for a more ‘granola’ like consistency.
For a flavor change swap the banana for apple sauce and the blueberries for apple chunks, and add a bit of all spice and/or nutmeg along with the cinnamon.
My husband and I love this recipe. The second time I made it I put the ingredients in a cupcake pan and cooked it a little less longer. This way there is a satisfying portion, and I won’t overeat keeping my portion smaller and enjoying this longer.
thank you!
I’m so glad you love the recipe!
I’m 100% in love. I couldn’t stop eating this straight from the pan. I did sub peanut butter though because I didn’t have almond butter. Perfect blend of sweet and savory. Definitely a repeat recipe!!!
I’m so glad you love it, Katie!
I love and make this often. Perfect for overnight guests. They help themselves and microwave serving for 20 seconds, delicious! Top it with yogurt or milk… I do use 2 cups of blue berries which makes it messy for handheld but again delicious!
Hi Kay, I’m so glad you love the recipe!
What could I use in place of almond butter?
Hi Rhon, you could use another nut butter. I haven’t tested this, but an egg might work too.
Hello can I prepare this the night before and just came it in the morning?
Just replied to another comment of yours—yes! Feel free to prep the night before. You may just need to bake it for a few minutes less.
Excellent recipe and definitely will make often! Thanks!
This looks so good! What would you recommend for a nut & seed-free alternative for the chopped pecans? The only thing I can think of is dried fruit – would that work? Or can it simply be omitted?
Hi Carolyn, you could use dried fruit or omit them!
On the nutritional content, what is the serving size for the amount of calories and nutritional per serving? It’s missing.
Hi, Robin – the recipe says it makes 6 servings.
Absolutely loooove this recipe! This is my 3rd time to make it for the week. Makes me truly excited for breakfast each morning! I top it off in the morning with Greek yogurt and some cinammon. I also added vanilla protein powder to the mix and it’s helped me stay fuller for even longer! Love it
Can this be made the night before or earlier and then frozen?
Hi Carol, yes! It freezes well.
How would you reheat it from frozen?
Hi Karly, let thaw overnight in the fridge before reheating, or defrost in the microwave.
I just made this tonight for a brunch tomorrow at 8:30. Should I put it in the frig until tomorrow morning, or can I cover it and serve it room temp tomorrow?
Hi Janice, I would stick it in the fridge overnight, then let it come to room temp (or reheat in the oven at 325°F) before serving.
Can I prepare it but not bake it the night before and then bake it in the morning?
Hi Kristina, yep! That should work fine. You may need to bake it for a few minutes less, as the oats will absorb some moisture overnight.
Have made this many times and its a family favorite. Wondering how diced apples would be (versus berries)…
I subbed the banana for apple sauce, and omitted the maple and added a tablespoon extra apple sauce for sweetness and it tasted delicious! Also mixed in some chopped dates.
Can this be made without nut butter? What would work well to sub in its place? Thank you!
Hi Kat, I haven’t tested this, but you might be able to replace it with an egg. If a nut allergy is the issue, sun butter or potentially tahini would also work.
I used peanut butter in place of almond butter and butter in place of coconut oil. I also mixed in about a half a cup of coconut flakes. It turned out perfect!
I used peanut butter and butter instead of almond butter and coconut oil . Only because of my limited pantry supplies . A very moist , fluffy textured oatmeal .
I’m glad you enjoyed it!
Apologies if this has been asked but wondering if I can use applesauce, Aquafaba or whatever you might suggest to replace the oil without adversely affecting the texture:). Thanks!
Hi Nancy, you could probably just omit the oil here and not replace it with anything. I think applesauce or extra banana might add some moisture, I don’t think aquafaba would be necessary.
Can you pre-mix this, put in the fridge over night and then bake it?
I did this and it turned out great!
Did you wait to put the topping on til right before baking?
Doubled this and baked in a 9×13 pan. Added a few extra minutes onto the baking time and it was delicious!
I’m so glad you loved it, Renae! Glad to know the double batch worked well too.
Could I sub an egg or 2 for the banana if I have someone who isn’t a fan of bananas?
2 eggs should work here.
