Healthy No Bake Cookies

These healthy no bake cookies are vegan, gluten-free, and dairy-free, made with wholesome ingredients like oats, peanut butter, and maple syrup.

I love classic no bake cookies…but I might love these healthy no bake cookies even more. I almost always have everything I need to make them in my pantry, so out of all the cookie recipes I’ve shared, these healthy no bake cookies might be the ones I make most often. Vegan Peach Cobbler

This vegan peach cobbler is easy to make with 10 ingredients! It stars juicy peaches and a crisp, buttery topping. I love it with vegan ice cream on top!

This vegan peach cobbler recipe is perfect for peach season. Though you could use frozen peaches here, it’s really meant to be a fresh peach celebration. I don’t sweeten them, simmer them, or peel them. Instead, I just drizzle them with a little lemon juice for brightness. Then, I top them with a quick, buttery topping and bake them until they’re tender and juicy. Naturally sweet and brimming with peachy flavor, this one’s an essential late summer treat. And I haven’t even told you the best part—this vegan peach cobbler is easy to make with 10 ingredients! It comes together in under an…

Pesto Havarti Macaroni

This creamy havarti macaroni recipe uses under 10 ingredients, so it's super easy to make. I add dollops of pesto and peas to brighten it up.

As I was planning what to post this fall, I realized that I’d never shared an easy stovetop macaroni recipe. Growing up, my sister and I devoured mac and cheese out of the box, and these days, I still enjoy good homemade macaroni on occasion. It was high time I shared a recipe here. Luckily for me, the Two Peas & Their Pod Cookbook just came out. I’ve been friends with Maria of Two Peas and Their Pod for years so I couldn’t be more excited for her book to arrive! It’s full of nourishing, easy-to-make recipes that are all family-friendly, plus…

These easy oat bowls are the perfect breakfast if you love eating oatmeal in the morning but don’t have time to cook before you head out the door. My Trip to Stonyfield

Meeting Stonyfield Yogurt's partner farmers truly inspired me. They are passionate about and dedicated to producing good, organic food.

One of the great perks of my job is when I get to visit new, picturesque places and meet farmers who so passionately live for their work. I got this in spades when Stonyfield invited me to Vermont to visit some of their partner organic family farms and to hear from their co-founder Gary Hirschberg. I’m not sure what I expected, but after spending two days meeting with the farmers and hearing Gary’s mission of (basically) converting our whole planet to organic, I left truly inspired. I was delighted to see that these farms are true family farms, as Stonyfield…

Harissa & Spinach Shakshuka

This spiced-up riff on shakshuka is a delicious breakfast or brunch! It features a harissa-seasoned sauce, fresh spinach, and creamy avocado.

Who else loves shakshuka?! I’m such a fan of this Middle Eastern and North African breakfast dish that if I see it on a restaurant menu, I’ll almost always order it. But more often, I make it at home. You can find a traditional shakshuka recipe elsewhere on the blog, but today’s recipe is more of an unconventional twist. I add harissa to the sauce for spiced depth of flavor, and I stir in spinach for a fresh veggie kick. To take it over the top, I pile on avocado slices before scooping it all up with pita. It’s such…
