Tasty, refreshing, perfect side dish to grilled meat during asparagus season. And Avocado dressing is sooo creamy and nice touch to the dish!

Meal-prepped this for my lunches this week (with some teriyaki chicken) and it is to DIE FOR. I love asparagus, so always looking for new ways to prep it. I skipped the pine nuts (because I don’t care for them) but will sub toasted almond slivers next time I make it. With or without the avocado dressing (I’ve had it both ways), it is absolutely delicious and going into the rotation for spring/summer.

I’m looking forward to making this, but I’m curious why there’s no avocado mentioned in the ingredients or the instructions for the avocado dressing.
