This cake is so easy and so good. You just replaced my go to apple bread recipe of 40 years..and that was yummy! It is perfect as is, but i like doing in loaf pan and i up the spives a little and add diced crystallized ginger. I also have added coconut. So delicious! Thank you for sharing !!!

Let me start off by saying I needed to get rid of 2 slightly mushy apples 😂 so I had to use what I had on hand:
