I just popped the cake into the oven, but I worry it may not turn out well. When it comes to fruit based desserts, I don’t like using cups, only metric. I think I definitely added far too much apple since the batter is more akin to an apple fritter dough. It worked with the streusel topping and was delicious! I went 40 minutes. I couldn’t turn the cake out so just let it cool completely in the pan. I love the significant amount of apple chunks, really hit the spot!
If anyone else wants to add streusel too, I used 6Tbs light brown sugar, 1/2 cup flour, 1tsp cinnamon, 4 Tbsp cold butter diced, 1/4 cup chopped pecans, chilled while I made the cake.
I skipped the nuts in the cake.

This cake is delicious and so easy to make, I made it twice last fall when I discovered your recipe and just made my first one this year. Can the recipe be successfully doubled to make two pans at once? I also put a light icing sugar glaze over it after it had cooled. Everyone loved it from 5yr o 65yr. I love your ” Love and Lemons” recipes!
