In reply to Laura. Exact same issue. The bottom would cook and I would go to turn but the top was still extremely runny & just collapsed. This was after burner had been turned to low.

I LOVE these and many of your other recipes. Thank you.
I just learned I am “sensitive” to egg whites!?!
I have tried the ‘usual’ substitutes but unsuccessful.
Have not tried just yolks… hmm… maybe that would work?
Do you have any suggestions?

I had trouble turning these, was impossible, that were falling apart. There is no chance mine will look like the ones on the picture, they don’t even rise.
