Hi KT, I’m not sure how that would work. It could be fine, or the breading might fall off a bit in the freezer. If you try it, I would freeze slices in a single layer on a baking sheet for 2 hours (until solid), then transfer them to an airtight container or bag for longer storage. Let us know how it goes if you do it!

Made this and it came out great, I used regular flour and it was yummy and crispy! I use a ninja crispi air fryer!

I enjoyed this eggplant. Pretty simple to make and healthy version. I did add some sauce which helped make it taste more like eggplant parm.
