Lemony Chickpea Salad

Today, I’m participating, in Food Bloggers Against Hunger. A movement organized by Nicole of The Giving Table, in response to the movie A Place at the Table. Today 200 food bloggers are sharing budget-friendly recipes to raise awareness about hunger in America. There is plenty of food in this country, yet most don’t realize (myself previously included) that 1 in 4 kids don’t know where their next meal will come from. One of the main points of the film is that hunger and obesity in this country go hand in hand. Ingredients that make up unhealthy processed foods (corn, soy,…

Brussels Sprout & Sunchoke Salad

What's your favorite sunchoke recipe? Do you have one? I love this caramelized sunchoke & Brussels sprout salad - a perfect light winter meal.

It’s hardly winter in Austin anymore, but I’m still trying to keep all of you snowbirds in mind. Enter: the winter sunchoke salad. This sunchoke recipe is full of warm, roasty goodness and brightened up with a tangy lemon dressing. Cooking with sunchokes Have you cooked with sunchokes? Do you have a sunchoke recipe to recommend? They’re new to me, but I just love them, so I was eager to develop a sunchoke recipe of my own. Sunchokes, also known as Jerusalem artichokes, have a potato-like quality. I like them both thinly sliced and roasted or sautéed with butter and…

Sweet Potato Surprise

A creamy noodle casserole with mac n' cheese style vegan sweet potato sauce. Spinach, shallot, scallions + sage are baked in for extra nutrients and flavor!

I first made this months ago with the very first butternut squash of the season. I had decided ahead of time that it would be a “non-photo” night since casseroles are not the easiest subject matter. Of course, after we made it, I was regretting not having the camera out because it tasted way too good not to share. For the second go-around, I made it with sweet potatoes only because that had a better ring than “butternut squash surprise.” If you’re vegan, this will taste like a baked mac and cheese. If you’re not vegan, it will just taste…

Chickpea Nicoise Salad

Tossed with an herby lemon dressing, this vegetarian take on the classic Nicoise salad makes a healthy weeknight meal for spring or summer. Gluten free.

We were on vacation in Nice around this time last year, and I think I ate a nicoise salad for lunch every day of that trip. Or as Jack has coined it, the “Nizzan” salad, because the Italians call Nice “Nizza” (pronounced like pizza). We learned this as were running through the Rome airport (we are always running), and the airport desk workers were yelling out “Nizza! Nizza! last call for Nizza!” So that’s what we call it now. The city and the salad. This is one of my favorite main course salads because it’s so filling yet light and…

Sesame & Almond Asparagus Salad

Spring greens & asparagus make a delicious salad with nuttiness from toasted seeds & almonds, salty cheese & tangy dressing. A must-make weeknight dish.

I made this last week for my sister and her husband while they were in town. I don’t know if we were trying to impress them with some kind of kitchen wonders, but last Sunday night we (I) decided we would attempt to make our own cheese, roll out our own pasta, and whip up some lemon tarts… all after a long afternoon of walking around in the hot sun and a quick stop at our favorite wine bar. We all arrived home sweaty and exhausted, ready for the cooking fun to begin. The cheese was an epic failure, the…
