Brunchy food… it’s perhaps what I cook the most, but what makes it to this site the least. Saturday and Sunday mornings are just not the time to be breaking out the camera. So in an effort to provide a few pre-Easter brunch ideas, we had eggs for dinner… something we should really do more often. I love this sort of meal because it’s a bit of a fridge clean-out. This might be my favorite thing I’ve made on this site so far. I know, that’s such a big statement since I usually feel that choosing a favorite recipe is like choosing a favorite child (or in our case, dog). But I have an un-dying love for sun dried tomatoes… not to mention basil, coconut, wine, pine nuts, & balsamic. So what happens when you put 6 of your favorite things all together? In this case, you get a warm & creamy – yet tangy – bowl of deliciousness. Just be happy that I left chocolate out of this mix.

Cauliflower Crust Pizza, Part 2

This is part two of the cauliflower crust pizza post from the other day. I had wanted to try this again as a vegan version using flax in the crust instead of eggs (and figure out how to make it not fall apart). I haven’t gotten around to that yet (I’ll report back when I do), but this version is entirely dairy-free. I topped it with leftover kale pesto that I had stored away in my freezer along with some sautéed broccolini, roasted tomatoes, and pine nuts.
