What’s your favorite fall vegetable? If you’re not saying “sweet potatoes!” with an exclamation, then, well, you might want to switch over to another post.

My favorite has to be the almighty and ever-so-versatile sweet potato. I love the way my kitchen smells when I roast them and I love how they’re easier to cut (without injury) than most squashes. For some sweet inspiration, here are some of our favorite recipes:

  1. Sweet potatoes just may be my most favorite vegetable as well. I know for 2 main reasons:
    1. I never EVER get tired of them.
    2. It’s one of the few vegetables I can get my fiance to eat on a regular basis and not complain about.

    Sweet potatoes are the best! Those tacos look amazing, they will be pinned immediately to try out asap. I’ve got a recipe for a traditional Danish dish with a twist hitting the blog soon – it’s a sort of potato hash, but I’m using sweet potatoes because I simply cannot get enough of them.
