Summer Veggies

A collection of healthy recipes starring summer produce from food bloggers around the web.

I just realized this weekend is Labor Day weekend (a fun surprise)… so happy long weekend everyone!

I feel this summer is abruptly ending. In less than 2 weeks we’ll be traveling to places much colder than it is here, and by the time we get back it’ll be almost October. I’m actually really looking forward to pumpkin bread season, but for now, I’m still savoring the summer and trying to cram in some last minute late-season recipes.

Here are a few I’ve had pinned that look especially delicious:

Vegan tomato bisque with grilled corn and pasilla peppers from 10th Kitchen

Sweet corn & roasted jalapeño hummus from How Sweet it Is

Creamy (vegan) Roasted Tomato Basil Sauce from Tasty Yummies

Oatmeal Zucchini Cookies from Eat this Poem

Chilled Summer Squash and Sesame “Noodles” from Tasting Table

And a big thank you to all who left such sweet comments the other day. We’ll pick a winner at midnight tonight and email the winner over the weekend.

  1. Very easy recipe to help make. I did not have
any tinned mushrooms so put to use clean, chopped mushrooms which I included for the pasta about five minutes prior to the close within the cooking time, alongside some prawns I also extra some sweetcorn to sneak in a few supplementary veg for
my teenaged son. He cherished it, as did the remainder of the household.
I also second hand Gluten-free pasta and flour and soya milk and goat’s butter as I’m able to tolerate
neither gluten nor cow-dairy. Everything tasted superior!
Many thanks for publishing the recipe.

  2. I’m a complete newbie with regards to cooking, but this recipe was not difficult even for me! It absolutely was utterly yummy!! Thanks to your wonderful one that extra this recipe!

I feel like summer is ending soon as well, but when I think about what the September and October harvest has to offer I don’t feel sad anymore. I’m excited to use those product in my cooking again!

I’m kinda sad that summer is ending but I do love pumpkin season! My long weekend is going to be filled with cooking up a bulk order of tomatoes from my csa while snacking on roasted padron peppers (one of my new favorite summer eats). Maybe I’ll try the tomato sauce recipe you found! It looks good!

  5. Interesting — I’d never realized that potatoes were considered summer vegetables!

oh you’re right, I guess potatoes are out year round – I just happened to get a bunch of those little red ones in my csa during the summer.

  6. What a great round up of recipes! Thanks so much for sharing my tomato sauce! Have a great weekend, Jeanine.
