I realize we’re at the beginning of pumpkin latte season, but I still have lots of late summer produce – eggplant, summer squash, and peppers of all shapes and sizes. Here’s a little roundup of some of my favorite red pepper recipes, plus a few that are on my to-make-soon list. As always, feel free to suggest some of your favorites!

  3. The red pepper and white bean spread is calling to me right now! I love red peppers the best, they seem to still have a hint of sweetness, which I love.

    Your stuffed peppers look great! I really like all of these suggestions. They’re definitely inspiring. I love roasted red pepper hummus with homemade pita chips. You can find the recipe for the hummus on my blog.

  10. It’s such a great idea that you give us a review of some of your favorite recipes. And those stuffed peppers, harissa and romesco sauces look amazing. Must use these little red peppers more often!
