    This was delicious! I didn’t have za’atar but I had sumac so I used that. The eggplant was the bomb. Paired with feta and tomatoes it was a super tasty combo. I’ll be making this again.

    I’m always stumped when it comes to eggplant, and am not trying to make it something that it’s not, like a burger, a salad is much more fitting, nice salad, thank you

    Where is the recipe for the eggplant salad with roasted tomatoes and farro? The web link for that recipe takes me to this eggplant salad recipe which is not the same as the one with roasted tomatoes and farro. I had bought all the ingredients for that recipe and now I can’t find it on your website anymore.

      I don’t think the recipe you’re looking for is from this blog – I did a search for the name you mention within the blog and from Google for Love & Lemons and it didn’t come up with a result.

      Although, now that you have the ingredients – I think this salad could be good + more filling on a bed of farro! I was planning to add greens like arugula and some chickpeas to make it a meal salad.
