Hi Laura, raw (peas from frozen) in the last few minutes, they cook quickly so a few minutes in the hot risotto will cook them. They're done when they're bright green and tender. I like my asparagus with a bit of a snap, before it becomes mushy.

Hi, I'm excited to make this recipe as it perfectly fits what I have on hand right now. Do the peas and asparagus go in raw, or should they be cooked first?

I've never tried making risotto with brown rice, so I can't say 100%... but I've made farro risotto recently which was delicious, so I'm inclined to say that brown rice would be fine. Let me know!

Asparagus has been used as a vegetable and medicine, owing to its delicate flavour, diuretic properties, and more. It is pictured as an offering on an Egyptian frieze dating to 3000 BC. Still in ancient times, it was known in Syria and in Spain. Greeks and Romans ate it fresh when in season and dried the vegetable for use in winter; Romans would even freeze it high in the Alps, for the Feast of Epicurus. Emperor Augustus reserved the "Asparagus Fleet" for hauling the vegetable, and coined the expression "faster than cooking asparagus" for quick action.^
