This is the best carrot cake ever. I skipped any add ins and roasted some pecans with maple syrup on them and put them on top. I’m making it again but have no baking powder. Could I or would you ever substitute the baking powder for some lemon juice to do the trick with the baking soda?

Such a great recipe! Perfect spring cake you would never know was low sugar! So moist and perfectly sweet! I used melted butter in place of coconut oil and loved how it turned out!
